🍴 Recipe of the Month: Instapot Cauliflower, Sweet Potato, Quinoa Curry Stew
Winter calls for warm, nourishing meals; and this recipe is one of my favorites! Packed with nutrients and flavor, it’s easy to prepare and perfect for busy families.
Ingredients:

1 head of cauliflower (separated into smaller pieces)
-
2 large sweet potatoes (chopped into 1-inch cubes)
-
1 cup uncooked quinoa
-
1 cup of green or red lentils
-
Assorted veggies (carrots, peas, broccoli, etc.)
-
1 tbsp curry powder
-
2 tsp cumin
-
2 tsp liquid aminos (optional)
-
Salt and pepper to taste
-
4 cups vegetable broth/stock
-
1 14-ounce can of coconut milk
Directions:
-
Place all ingredients except coconut milk into an Instapot.
-
Cook on high pressure for 8–10 minutes.
-
Allow to self-release for at least 10 minutes, then rapid-release any remaining pressure.

Stir in coconut milk and let sit for a few minutes before serving.
